Apricots, Tots, & Trots

We have an apricot tree.  Ok, ok…my neighbor has an apricot tree and the branches, heavy in sweet pale orange fruit, stretch over the fence and occasionally drop a few samples in our yard.  They are delicious.

I stare at all these little lovelies just waiting on the tree.  Why, they are practically rotting before my eyes.  This will not do.  I will pick just a few.

A painter’s ladder and four buckets later, I am feeling guilty over this stolen fruit.  My son and I each gobble one down while my daughter flaps her hands and grunts for her own.  Three down and three hundred to go, what to do?

First, we eat three more each and then cookbooks come out.  We dwindle the masses with fresh apricots on our granola, apricot & vanilla smoothies,  apricot muffins, apricot stuffed chicken, and apricot strawberry cobbler.

I am eyeing the tree for more supplies when something decisively changes my mind.  Too many apricots in little tots creates the trots.  Lucky lady, serves me right and I am not baking with apricots tonight.

About Apricots

Apricots are originally from China and were brought here by the Spanish.  They are planted in the gardens of all the Spanish missions in California.  Apricots are rich in beta carotene, vitamin c, and are the best natural sources of vitamin A.  They are great for eyes and skin.  Clearly they are also a good source of fiber.  So, if you have runner’s block??? try an apricot or twelve.
